自分でつくる麻婆豆腐が好きすぎる!!【材料】2〜3人分(麻婆あん)・豚ひき肉…150g・白ネギみじん切り…1/2本分・おろし生姜…小さじ1/2・おろしニンニク…小さじ1/2・豆板醤…小さじ1・甜麺醤…大さじ1・砂糖…小さじ2・ラー油…小さじ1(スープ)・水…150ml・醤油…大さじ1・鶏ガラスープの素…小さじ1(その他)・絹豆腐…1丁・塩…ひとつまみ・油…小さじ2・水溶き片栗粉…(片栗粉小さじ2:水大さじ1)・ラー油…お好みで・山椒…お好みで———<作り方>①ひき肉を焼くボウルに豚ひき肉を入れ、塩ひとつまみを加えてしっかりこねる。フライパンに油を入れて中火で熱し、ひき肉を塊のまま焼く。両面にしっかり焼き色をつけて、肉の旨みを引き出す。———②香味野菜を炒める白ネギ、おろし生姜、おろしニンニク、豆板醤を加える。ニンニクの香りが立つまで炒めたら、ひき肉と混ぜ合わせる。甜麺醤、砂糖、ラー油を加え、じっくり炒めてコクを出す。———③仕上げる水、醤油、鶏ガラスープの素を加える。豆腐は下茹でし、あんと合わせたら軽く煮込む。水溶き片栗粉でとろみをつける。器に盛り、お好みでラー油や山椒をかけたら完成。
